Cooking Dutch Pancakes with the captain on Holland America Line

Captain Arjen C. van der Loo makes Dutch Pancakes onboard m/s Oosterdam.

Presentations from award-winning master chefs have become a tradition in the Culinary Arts Center, presented by Food and Wine Magazine. On my particular sailing, I attended a culinary demonstration from a master chef who also happened to be the master of the vessel.

Dutch Pancakes

Dutch Pancakes are a cross between a pancake and a crepe. A simple and utterly delicious carb, Dutch Pancakes can be filled with a variety of sweet or savory ingredients. Captain van der Loo, who has a sweet tooth, made three types: plain sprinkled with powdered sugar and cinnamon; filled with apples; and a combination pancake filled with apples and bacon.

Learn to cook like the pros

The Culinary Arts Center was packed to capacity with people eager to watch the captain sift, beat, and cook the popular delicacy from his hometown of Nieuwer-Amstel, a village near Amsterdam. In addition to learning how to make the pancakes, Captain van der Loo answered questions from the audience about a range of topics, which included asking the Captain for tips about docking a cruise ship in the fog, his German Shepard, and plans for the Ossterdam’s refurbishment in Australia at the completion of the 2012 Alaska cruise season.
